The Amarone della Valpolicella Classico DOCG “Camporocco” is produced with grapes grown in our vineyards in Valpolicella Classica, located 350 metres above sea level, on the terraces supported by dry stone walls called, “marogne”.
The calcareous soil gives an excellent acidity to the grapes, making it suitable for wines destined to be aged.
After selecting grapes of the highest quality, we gently place them on slatted wooden trays to allow them to dry for a lengthy period. After pressing, the must and macerated skins are fermented in temperature-controlled tanks. After racking, the wine is placed in new French oak ‘tonneaux’ (500 litre barrels) where it remains for approximately 36 months.
From this process is produced a wine with an unmistakable structure, often served on special occasions or at prestigious dinners. Shelf life: 15-20 years. Serving Temperature: 18°C.
Our Amarone “Camporocco” ages in new French oak ‘tonneaux’ with a capacity of 500 liters. These barrels which we use for the Amarone are new and up to 2 years old, with medium charred staves so in this way the wine will evolve without being overwhelmed by strong woody aromas, allowing for amplification of the aromatic complexity of the wine itself.
The ancient method of drying, which is typical for making Amarone and suited, in this case, to the soil of the Camporocco vineyard and produces a unique wine with complexity and majesty. Amarone “Camporocco” unites boldness and elegance, combining the essence of cherry with balsamic and toasted aromas.
The structure, taste and aromas of this wine allow it to be combined with red meat dishes, for example, pastissada de caval (a typical traditional Veronese dish made with horsemeat dating back to the days of chivalry) and with mature cheeses. However, for something unusual try it with a slice of Sacher torte or a fig compote: you will discover new aromatic facets!
