Our Valpolicella Classico typical of the best tradition of Valpolicella as produced in the past, is ruby red in colour.
It has a pleasant scent with notes of cherry, from the trees which are still cultivated on our land. It is a versatile wine which can be served throughout the meal as it is easily combined with first and second courses. The vineyard producing the grapes is situated at 300 and 350 metres above sea level on the limestone hills of Valpolicella Classica.
Shelf life: 3-4 years. Serving temperature 14° - 16° C.
Our Valpolicella Classico is obtained by double pressing of the grapes: in part, some of the freshly picked grapes are pressed immediately on harvesting, while the other grapes are dried in the drying room for 2-3 weeks. The must ferments for about a week at a controlled temperature and the wine is then aged for 6 to 7 months in 2000-liter, aged French oak barrels.
Although the Valpolicella Classico is a wine representing the deep peasant tradition of Valpolicella, today it is also very much enjoyed by younger people due to its versatility. Despite its timeless simplicity, it is very elegant and can be combined with most typical daily dishes, such as cold cuts and cheeses as well as red meat.
